This particular variation is called “gomoku soba.” Soba is a type of noodle made from buckwheat. It’s supposed to be very healthy.

Soba is often used in soups, fried with meat and vegetables (yakisoba), or eaten cold (zarusoba).

  1. Mitsu says:

Note that the word soba has two meanings.
    1. buckwheat noodles
    2. noodles in general

Examples of case 2 include yakisoba, where plain wheat noodles are used, and likewise chukasoba (or Chinese soba) which refers to ramen
